Heart Healthy Apple Walnut Blueberry Spinach Salad

Enjoy this tasty salad that is also heart smart! Some studies have found a link between increasing your intake of leafy green vegetables like spinach and a lower risk of heart disease. Walnuts were added to help maintain healthy cholesterol levels. And finally, antioxidants in blueberries are strongly linked to reduced levels of oxidized LDL.
Ingredients
- 4 cups spinach or other favorite greens
- 1 apple, thinly sliced or diced
- 1/2 cup blueberries
- 4 tablespoons walnut pieces/halves or other favorite nut/seed
- 4 teaspoons flavored balsamic vinegar or favorite vinaigrette
- Salt & pepper to taste
- 3 to 4 tablespoons crumbled feta or goat cheese (optional)
Instructions
- Place all salad ingredients in a large bowl and toss with balsamic vinegar or other favorite vinaigrette.
- Plate as desired and add salt and pepper to taste. Enjoy!
